How this calculator works
Why ratios matter more than any other coffee variable
Coffee is more sensitive to the coffee-to-water ratio than to almost anything else you can change. Grind, water temperature, and brew time all matter, but they matter within a window that a bad ratio can push you completely outside of. Too much water and even a beautifully-ground bean produces a thin, sour cup; too little water and the same bean tastes bitter and harsh. The Specialty Coffee Association's "golden cup" range — a ratio of roughly 1:16 to 1:18 — is where most drip and pour-over coffee tastes balanced, but the ideal number shifts by method because contact time and pressure change how much of the coffee dissolves.
Weighing versus scooping
Coffee beans vary in density more than most people realise. A tablespoon of light-roasted, dry-processed Ethiopian beans can weigh 4.5 grams; a tablespoon of dark-roasted, oily espresso beans can weigh nearly 7 grams. That's a 55% difference for the same "tablespoon." If you brew by volume you're guessing at strength every time you open a new bag. A basic $15 kitchen scale that reads in 0.1 g increments removes the guesswork completely — put your empty brewer on the scale, tare, add coffee to the target weight, tare, then pour water to the water target. It takes ten seconds and the payoff is a consistent cup every day.
If you don't have a scale, use the tablespoons figure above as a starting point, then adjust half a tablespoon at a time. Coffee that tastes sharp and sour usually needs more grounds (or a finer grind); coffee that tastes harsh or ashy usually needs fewer grounds (or a coarser grind).
Method-by-method notes
Drip and auto-brewers land in the 1:15 to 1:18 range. The machine handles the bloom and pour cadence — your only two variables are ratio and grind. If your machine tastes weak on its default setting, brew half a pot rather than a full one; drip brewers under-extract when the filter bed is too shallow.
French press works best a touch stronger (1:13 to 1:15) because full immersion extracts more evenly and the mesh filter leaves oils and fine sediment in the cup, which read as body. Break the crust at four minutes, skim the foam, then plunge slowly.
Pour-over is the classic 1:16 recipe: 30 g coffee, 500 g water, a 45-second bloom with 60 g of water, then poured in two or three stages so the total brew time lands around 3 to 4 minutes.
Cold brew concentrate uses a much heavier dose (1:7 to 1:10) because cold water extracts slowly and inefficiently. Steep coarse-ground coffee in the fridge for 12 to 18 hours, then dilute the finished concentrate 1:1 with water, milk, or ice to drink. Undiluted cold brew is fine as an espresso substitute but is not a drinking-strength coffee.
AeroPress is famously flexible — anywhere from 1:12 (nearly espresso-like) to 1:17 for a mellow cup works. The classic inverted recipe uses 15 g coffee, 225 g water at 80 °C, and a 1-minute steep before plunging.
Water quality is the invisible variable
Coffee is 98%+ water by weight, so what comes out of your tap matters. Very soft water (like distilled or reverse-osmosis) makes flat, hollow coffee because there aren't enough minerals to extract flavour. Very hard water makes chalky, muted coffee and scales up your equipment. Filtered tap water is fine for almost everyone; if your tap water tastes strongly of chlorine, a $20 pitcher filter is a bigger upgrade than any grinder you can buy for the same money.
