WhiskMath is the reference I wish I'd had in my own kitchen: every ratio, every conversion, every "how long does a 14-pound turkey actually need?" answered in one click, with the math laid out so you can trust it. No pop-ups asking you to log in. No 2,000-word life story before the calculator. Just numbers you can cook by.
Our methodology
Where the ingredient densities come from
Every gram-per-cup value used in our converters starts with the USDA FoodData Central database — the same source professional food scientists use. For ingredients where the USDA reports a range (all-purpose flour is a notorious offender), we cross-check with King Arthur Baking, America's Test Kitchen, and Modernist Cuisine, then choose the value that best matches how a home cook actually scoops. We document the number on the calculator page so you can see exactly what we used.
Food-safety temperatures
Every internal-temperature target — poultry, ground meat, whole cuts, leftovers, reheating — follows the USDA's Safe Minimum Internal Temperature Chart published by the Food Safety and Inspection Service. When a resting-temperature allowance applies (whole poultry, roasts, chops), we call it out on the page rather than burying it in a footnote. When guidance differs between the USDA and the FDA Food Code, we default to the more conservative number and say so.
How every calculator is tested
Nothing ships until it passes three checks:
- Math review. Every formula is written up in a spreadsheet with worked examples across the full input range — smallest realistic value, largest realistic value, and three points in between. We spot-check against printed references (Rombauer, McGee, Ruhlman's Ratio) and known-good recipes.
- Edge-case sweep. Zero, one, and impossibly large inputs get tried on purpose. Fractional cups, mixed units, and boundary values (a 14.99-pound turkey vs. a 15-pound turkey) should all round predictably.
- Real-kitchen sanity check. The most-used calculators — turkey, pizza dough, cups-to-grams, brine, sourdough — get cooked or baked against, at least once, before launch. If a number would embarrass me at my own dinner table, it doesn't ship.
When we're wrong
Kitchens are messy and reference values disagree. If a number here looks off, tell us — include the calculator, your inputs, and what you expected. Every calculator page shows a "Last reviewed" date so you know when we last went over it, and we re-audit the whole library every quarter.

WhiskMath's calculators are estimates built for home cooks and hobby bakers. They aren't medical, nutritional, or professional food-service advice. When food safety is on the line — reheating leftovers, cooking poultry, brining a large cut — always verify the internal temperature with a calibrated probe thermometer and follow the USDA guidelines linked above.
