How this calculator works

A cake pan holds batter. When you swap one pan for another, all that really changes is how much batter fits and how deep it sits. This calculator does the arithmetic behind that swap: it computes each pan's batter capacity, divides the target by the source, and gives you a single multiplier to scale the recipe by. The rest — bake time, crumb, browning — depends on how deep the batter is and how quickly heat reaches the middle.

The pan-area math

Batter capacity is surface area × fill depth. Cake pans are typically filled to somewhere between one-half and two-thirds full, which for a standard 2-inch-tall pan works out to roughly a one-inch (2.5 cm) batter depth after rise. That's the fill depth this calculator uses, so the multiplier reflects "how much batter will comfortably rise in this pan without spilling", not "how much batter physically fits to the rim".

Surface area is where the shapes differ. For a round pan, area is π × r² — so an 8-inch round has an area of about 50 square inches, and a 9-inch round has about 64. A 9-inch round is 27% larger than an 8-inch round even though it sounds like an inch bigger. For a rectangular pan, area is just width × length, so a 9×13 has 117 square inches — over twice the area of an 8-inch round. Bundts and tube pans don't play by this rule because their ring shape subtracts a chunk of the middle; for those, we go by manufacturer-published cup capacity (a "10-cup bundt" holds 10 US cups of batter when filled 3/4).

Worked example 1: 9-inch round → 8-inch square

A 9-inch round has π × 4.5² ≈ 63.6 square inches of area. An 8-inch square has 8 × 8 = 64 square inches. Almost identical. The multiplier is 64 ÷ 63.6 ≈ 1.01, which is well inside "make the whole recipe". Bake time is essentially unchanged because both pans have the same surface area and the batter will sit at the same depth. The crumb will look a little different at the corners of the square, but that's it.

Worked example 2: 9×13 rectangular → two 9-inch rounds

A 9×13 has 117 square inches of area; two 9-inch rounds together have about 127 square inches. The multiplier is 127 ÷ 117 ≈ 1.09 — call it ten percent more. If you have a recipe written for a 9×13 sheet cake and you want to turn it into a layer cake, you can bake the recipe as-is in two 9-inch rounds and expect the layers to run slightly thinner than a purpose-written layer recipe would. Bake time drops because the rounds are shallower per pan: check at 20–25% earlier than the sheet-cake time.

Why bake times change with depth, not just with quantity

Doubling the batter doesn't double the bake time. Doubling the depth might. Heat enters a cake pan from the sides and bottom (and, to a lesser extent, the top) and has to travel to the geometric centre of the batter. A thicker slab of batter has a further-away centre, so the outside sets and browns while the middle is still liquid. That's why a 9-inch round baked at 2 inches deep will overbake at the edges and underbake at the middle if you use a bake time written for a 1-inch-deep layer.

The other big variable is pan material. Dark metal absorbs more radiant heat and browns cakes faster; glass and ceramic heat more slowly but hold heat once they get there; light metal is somewhere in between. If you're swapping between materials as well as sizes, drop the oven temperature by 25°F (about 15°C) when moving from light metal to glass or dark metal.

Common substitutions worth memorising

  • Two 8-inch rounds ≈ one 9×13 pan (both about 100–117 sq in).
  • One 9-inch round ≈ one 8-inch square (both about 64 sq in).
  • One 9×13 ≈ one 10-inch springform (both around 100–130 sq in of area).
  • Two 9-inch rounds ≈ one 12-cup bundt in total batter volume.
  • An 8.5×4.5 loaf pan holds about 60% of a 9×13's batter — halve the recipe or expect overflow.

Whatever you swap to, keep the oven temperature the same and check for doneness with a toothpick or an instant-read thermometer (200–210°F / 93–99°C in the centre for most cakes). Bake time is guidance, not gospel. Watch the cake, not the clock.

Frequently asked questions

Yes, and it's a very common swap. A 9-inch round has about 27% more area than an 8-inch round, so batter written for the 8-inch pan will run thinner in the 9-inch pan and bake 15–20% faster. Either scale the recipe up by about 1.25× or accept a shallower cake and start checking early.

For same-material pans, no — keep the temperature the same and adjust time instead. Only change the temperature when you're also changing the pan material: drop the oven by 25°F when switching from light metal to dark metal or from metal to glass, because those hold heat more aggressively.

Between one-half and two-thirds full for most cakes, which gives room for the rise without overflowing. This calculator assumes about a 1-inch (2.5 cm) batter depth after mixing, which lands in that range for a standard 2-inch-tall pan. Bundts and tube pans typically fill to about three-quarters because their ring shape prevents overflow at the centre.

Add the two smaller pans' capacities together and compare to the original — if the total is within 10–15% of the original pan, bake the recipe as-is and check for doneness 15–25% earlier than the original bake time.

Area doesn't scale intuitively with linear dimensions. A 9x13 has 117 square inches; an 8-inch square has 64. Two 8-inch squares total 128 square inches — closer to 9x13 than one and a half. Always compare by surface area, not by 'that pan looks about twice as big'.

You can bake most bundt batters in a round or square pan, but expect a longer bake time and a different crumb — bundts are dense on purpose, and without the pan's central tube, the middle of a round pan can gum up before the edges finish. Split the batter across two 9-inch rounds instead of trying to fit it into one, and start checking at the original time minus 10%.
