How this calculator works
An air fryer is a small, tightly-baffled convection oven. The heating element is close to the food, the fan is aggressive, and the basket has no dead air — so hot air circulates around every side of whatever you're cooking. That geometry does two things: it browns and crisps surfaces faster than a conventional oven, and it cooks the inside a little faster too. The standard conversion rule falls out of that: drop the temperature about 25°F (roughly 15°C) and reduce the time by about 20 percent.
The reason for the temperature drop isn't that the food cooks slower — it's the opposite. Because air-fryer heat is more efficient, using the oven temperature directly will scorch the outside before the inside is done. The 25°F reduction gives the middle time to catch up. The 20% time cut then accounts for the fact that even at the lower temperature, the aggressive fan cooks faster than still oven air.
Why food type changes the numbers
The standard rule is a starting point. Different foods respond differently to the air fryer's fan-driven heat, and the presets in this calculator adjust the temperature or time factor to match.
- Frozen fries and tots are engineered for crisp exteriors straight out of the freezer. The par-fried coating browns quickly at air-fryer speeds, so a further time cut (down to about 68% of oven time) lands them at the right colour without a soggy centre.
- Chicken wings render fat and crisp skin much faster in an air fryer than in an oven — 40 minutes of oven roasting collapses to 20–25 minutes at the same finished quality. Always confirm 165°F / 74°C internal.
- Vegetables follow the standard 20% cut cleanly. A teaspoon of oil per cup of vegetables is plenty; more and they steam rather than roast because the excess pools in the basket.
- Fish is the most delicate category. Drop temperature another 10°F and cook for closer to 60% of oven time — fish goes from perfect to dry in about 90 seconds, so check by flake at the thickest point.
- Baked goods are the hardest category. Air-fryer convection is so strong that muffin and cake tops crust and dome before the middles set. Drop temperature by a full 50°F (25 base + 25 more) and use ramekins or lined tins with tall sides. Cover with foil for the first two-thirds of the bake if the top is browning too fast.
Food safety is unchanged
Regardless of cooking method, the USDA and FSA safe internal temperatures still apply: 165°F (74°C) for chicken and all poultry; 160°F (71°C) for ground beef, pork, and lamb; 145°F (63°C) with a 3-minute rest for whole cuts of beef, pork, veal, and lamb; and 145°F (63°C) for fish. Air fryers cook the exterior aggressively, which can be misleading — a chicken thigh can look done at 12 minutes but still measure 150°F inside. An instant-read thermometer is not a luxury for this appliance; it's the tool that makes the guesswork go away.
Practical tips for consistent results
- Don't overfill the basket. Air needs to move around every surface. Cook in batches rather than piling food two layers deep — a full basket steams instead of crisping.
- Preheat when the recipe asks for it. Most air fryers preheat in 2–3 minutes. Skipping preheat costs you 4–6 minutes on the far side because the food coasts up to temperature instead of hitting it fast.
- Shake or turn halfway through. Even with strong circulation, the top of a piece of food browns first. A midway shake evens things out.
- Trust the thermometer over the timer. Air fryers vary significantly between models — a 6-quart basket cooks differently to a 3-quart drawer. Time ranges here are guidance; internal temperature is truth.
